Banana boats & crust:
- 5 medium firm-ripe bananas
- 1 cup panko breadcrumbs
- ½ cup cornmeal
- ¼ cup all-purpose flour
- 1 tsp ground cinnamon
- 2 eggs, beaten
- Neutral oil (for frying)
Spiced ice cream base:
- 2 cups heavy cream, chilled
- 1 cup whole milk, chilled
- ½ cup sweetened condensed milk
- 1 tsp vanilla extract
- ½ tsp ground cardamom + ¼ tsp ground ginger (for warm spice notes)
Warm sauce & garnish:
- ½ cup chopped ripe mango (or pineapple)
- 2 tbsp honey
- Juice of ½ lime + zest
- Toasted coconut flakes or chopped nuts
Instructions
- Prep the Bananas:
Peel and slice the bananas into thick chunks—keep them firm so they don’t get mushy later. - Freeze the Ice Cream:
Scoop vanilla ice cream into balls and freeze for about 2 hours until solid. - Coat It Up:
Roll each ice cream ball in flour, dip in beaten eggs, then cover with breadcrumbs mixed with a little cinnamon and sugar. - Fry Time:
Heat oil and quickly fry each coated ball until golden brown—just 10–15 seconds! - Serve & Enjoy:
Place the fried banana with ice cream on a plate, drizzle honey or chocolate syrup, add banana slices, and dig in while it’s crispy outside and creamy inside!
