Banana boats & crust:

  • 5 medium firm-ripe bananas
  • 1 cup panko breadcrumbs
  • ½ cup cornmeal
  • ¼ cup all-purpose flour
  • 1 tsp ground cinnamon
  • 2 eggs, beaten
  • Neutral oil (for frying)

Spiced ice cream base:

  • 2 cups heavy cream, chilled
  • 1 cup whole milk, chilled
  • ½ cup sweetened condensed milk
  • 1 tsp vanilla extract
  • ½ tsp ground cardamom + ¼ tsp ground ginger (for warm spice notes)

Warm sauce & garnish:

  • ½ cup chopped ripe mango (or pineapple)
  • 2 tbsp honey
  • Juice of ½ lime + zest
  • Toasted coconut flakes or chopped nuts


Instructions

  1. Prep the Bananas:
    Peel and slice the bananas into thick chunks—keep them firm so they don’t get mushy later.
  2. Freeze the Ice Cream:
    Scoop vanilla ice cream into balls and freeze for about 2 hours until solid.
  3. Coat It Up:
    Roll each ice cream ball in flour, dip in beaten eggs, then cover with breadcrumbs mixed with a little cinnamon and sugar.
  4. Fry Time:
    Heat oil and quickly fry each coated ball until golden brown—just 10–15 seconds!
  5. Serve & Enjoy:
    Place the fried banana with ice cream on a plate, drizzle honey or chocolate syrup, add banana slices, and dig in while it’s crispy outside and creamy inside!
