Ingredients

Instructions

  1. Infuse the Cream Preheat oven to 325°F. Melt butter in a saucepan, cook shallot until soft (2-3 minutes). Add heavy cream, simmer gently, then remove from heat. Cover and steep 15 minutes
  2. Prepare Eggs Whisk egg yolks in a bowl until pale and slightly thickened.
  3. Temper & Season Strain cream, discarding shallots. Slowly pour warm cream into yolks while whisking constantly. Add salt, white pepper, nutmeg, and sherry (if using).
  4. Add Crab Gently fold in lump crab meat, keeping chunks intact. Divide evenly among 6 ramekins.
  5. Bake in Water Bath Place ramekins in a baking dish. Add hot water halfway up sides of ramekins. Bake 30-40 minutes until edges are set but centers slightly jiggle.
  6. Chill Cool ramekins to room temperature, then refrigerate covered for at least 4 hours (overnight preferred).
